I don't start cooking for Pesach until half an hour into the seder (how better to spend the endless Magid) so I'm having a hard time comprehending most of this thread.

OP, if I had a pesach kitchen, then yes, I would start cooking slowly and leisurely in the next few weeks.

Idk what it is about Pesach that gets everyone riled up...if anyone DARES say they've done xyz already people don't wanna know!
One year I knew that in the weeks leading up to Pesach I'd have to put extra hours in at work, so I cooked in December during a quiet week.
Honestly, I was scared of the FBI, no-one was allowed to find out! My neighbors, siblings etc were in and out...I was 'very busy doing laundry', my laundry room doubles as a Pesach kitchen. When I was done, Phew!
