Religion in this context doesn't just mean something official like Judaism or Islam. Sincerely held moral or ethical beliefs can count as religion for exemption purposes. You're neither attesting that a strict interpretation of Halacha says this or that Jews universally believe it. Remember, the whole idea of a incredibly complex and totally binding religious law is kind of unique to Orthodox Judaism. That's not what the American legal term "religion" means in this context.
This may be hard to understand but ask a lawyer or anyone who works in the public sector and they'll explain to you like this.
And Judaism isn't monolithic either. For some Jews, it's against their religion to shave their beard and for others it's not. Most rabbis support vaccination. But there are great rabbis who are against vaccination. They exist whether you like it or not. Being anti-vaccination is not against Judaism, it is what some people hold.

I never had strong opinion about shots or anything but when the school bullied us into it dd got her first mandatory flu shot and all of he// broke loose. She had extreme reaction her entire face and head blew up, she had cardiac weird symptoms and extreme rash Dr refused to acknowledge it was the shot.
I would never give it again!!!! Do whatever it takes, religion exempt or letter. Venishmartem is real

I literally came on imamother to get opinions on this. My daycare requires my kids to be up to date with vaccines and I do give vaccines, but I am not sure about the flu shot. Is it really unsafe? Can anyone chime in?

My friend’s son is allergic to…. The flu!
Twice in three years he had been in intensive care, hooked up to a ventilator for weeks, due to contracting the flu, which immediately shuts down his body. I’m assuming that his name has been listen on this forum for critical tehillim. He can not get the vaccine, he’s allergic to it! He depends on kids around him to get it.
Talking about a normal, beautiful boy, who if you’d know, I’m sure you’d have changed your tune.

I hate to break it to you but many still get the flu with the shot.

That's not an allergy, it's a cytokine cascades. Cytokine cascades are caused by th2 skewing, which basically means that the arm of the immune system that supposed to tamp down the immune response when the threat has been neutralized is disabled, leading to an uncontrolled immune response which ends up causing loads of collateral damage.
Guess what's a primary cause of th2 skewing in otherwise healthy people? Yup. Vaccines.
