Roast eggplant cubes in olive oil about 3cm on 200c/400f.
1 garlic clove crushed
1/4 cup fresh parsley or 1-2 tbs dried.
3 tablespoons sweet chilli
1 teaspoon soy sauce.
Mix
Add in the eggplant

Cube onion, pepper, eggplant spread on oven tray, flavour generously with paprika, garlic powder, salt & pepper and oil
Put in oven 200/400 until roasted

Add to roasted eggplant, 1 diced pepper, 1 jar diced pickles, 3 or 4 cloves garlic minced and a splash of lemonjuice
