I am lookinmg for ideas on how to stretch fish to get more portions out of it. For example, for Succos I made breaded baked fish balls with one vaccuum packed fillet of salmon and a handful of frozen spinach and it lasted us all of chag (DH didn't love them but I think that was a spicing issue). He is even bored of my regular gefilte fish and doesn't usually like the cheaper types of fish at all. Any ideas are appreciated.

I make a yummy (and pretty fattening) tuna or salmon quiche that is always a real hit. It calls for 2 cans of tuna or a similiar amount of canned salmon. Reply if you want the recipe although I believe I have posted it before. Other recipes use tuna (I assume it is the cheapest fish) like Seraph posted the tuna balls with cornflakes.
Also you can use one small can salmon and puff pastry for a really yummy salmon roll up with a cucumber sauce (also a real hit and super easy.)

Sometimes I make a salmon knish in a puff pastry sheet.
On opened, defrosted pastry sheet,
spread layer of canned salmon (seasoned as you like it)
spread layer of "creamed spinach" (drained)
close pastry sheet (seal closed by wetting it a bit when closing it)
bake 350 25-35 minutes. should be puffy and lightly brown.
Totally decicious and fattening!
Seraph (when she was breslov) also once posted a fantasic sushi salad recipe which is also great for stretching fish. I made it using smoked salmon (lox). Mmmmm....
