Salad & rolls by everyone's place.
Soup served individually (French onion, mushroom barley, vegetable, Butternut squash, broccoli soup, potato soup.....)
Side of salmon or sushi platters on the table
Buffet style: ziti, blintzes, vegetable lo mein, Eggplant Parmigiano, fettuccine, mini egg rolls.

In my household, most people are just excited for the donuts and other desserts so I keep the rest to minimum.
Vegetable soup, salmon, Greek salad, latkes with applesauce/ sour cream. Sufganiot, ice cream, chocolate coins.

I think the year I did mini pizzas was the favorite. I cut out squares using a cookie cutter and made mini pizzas. It looked so much cuter than a large pie cut into slices.
Are you looking to do more of a buffet style? Then I would have different options out. A side of salmon always looks nice, or small pieces on skewers is also nice. Sides can be salad, potatoes, pasta (option cheesy or not).
Onion soup always goes well at a milky meal.
I think starting with how much time you want to spend is the first step.

When my kids were kids, I used to do this but I put out a variety of toppings and let each person decorate their own pizza. Other years I did "make your own sundae " also popular.

I once hosted dh's family for such a Chanuka party - decorate your own pizzas, I had 3 different cheeses and 10 toppings. I was so excited that it looked so nice
Well first person to come didn't understand the concept and started to fill a plate with the toppings as if this was a salad bar. When I explained the concept, I was told, but I don't want the pizza , just the toppings. She filled her plate with more than half of the toppings lots of cheese on top and sat down, her sister did the same. It was a bust.
So I advise having someone portion out the toppings and cheese on the pizza....
