Why does my eggplant parm come out dry? I've tried using ready pizza sauce. Tried tomato sauce. I use shredded mozzarella cheese. Any insight?

Do you bake it covered and only uncover for last 15 minutes.

A LOT of sauce and I pour some milk around the edges of the pan (I also do it for lasagna). Yum!
