What cut of meat is it? The pastrami is just the spices and curing.

For a 4 lb pastrami roast, place in a deep 9x13 pan, add water just 1/3 of an inch up. Cover tightly. Bake at 300 for 4 hours.

I trust your cooking advice all the time. Lately however I've been seeing weird cuts made into pastrami and corned beef, like shoulder/silver tip. So I think it depends on the cut because I wouldn't recommend that for a shoulder roast. Most other cuts, yes.
