Net bags for soup question

When I make chicken soup I use the net bags for the chicken and another one or two for the vegetables people don't eat but I like to use for flavor. This makes serving much easier because I just take out the bags and serve the the broth.

I use the same recipe my mother uses but it doesn't come out the same and she thinks maybe it's because she doesn't use any net bags and all the peices of things float around equally flavoring the soup.

My mother strains her soup with a strainer and freezes the broth. I thought using the bags could eliminate the need for that step.

Could this be?
Does using those net bags affect the taste?

I don't find it affects the taste but I only use one for chicken bones. I find that in general even if you use the exact same recipe everyone's chicken soup is so different.

It definitely could be. It also could be different water in different communities (hard vs soft..) or type of pot.

Is your soup good, even if not the same or quite as good?
It sounds much easier and sometimes the difference is not worth the extra work.

I've made my mother's soup in my mother's house (no bags) and it tastes like hers.
We live in the same community so the water is the same. She uses all different pots so it's probably not that either.
I may never figure it out but was wondering if the bags could be the issue.

Do you also strain it afterwards? That would make the difference imo. Try doing it your way and then straining it her way and see what happens. Good luck

Interesting you’re saying this, because my friend just mentioned that on peach when she doesn’t use the bags, her soup tastes differently.
I guess it may be worth a one time experiment to see if it’s the bags or your mothers techinas Wink (and if it is the bags see if the hassle will be worth the better taste)

I find with chicken soup the pot makes a huge difference.
Wider or thinner and what material. I have different pots and when I make in each one I know the taste it will have.

Never tasted a difference in net bags

Agree the difference is in the pot.
when I replace my pot it takes time for the chicken soup to taste "the old way".
also are u using the same chicken bones from the same store. I use carcases but different stores soup comes out differently. I only buy from 2 places.
