Do you eat a yom tov seuda on Hoshana Rabba?
I thought everyone did but someone told me that not everyone does.

We do. Challa. Soup with kreplach, chicken, vegetable and rice. Not fish or dessert because it's just too much.

My inlaws serve cold cuts and rolls or hotdogs and buns. Meaning we hold we need to wash and have fleishig but it doesn't have to be a traditional meal.

We do hold that at least one meal every day of chol hamoed should have meat and wash/bench, so we did that but it's because of chol hamoed.

As far as I know most do. Most will have challa and honey, fish, soup and kreplach. The kreplach have a meat filling so we consider that enough to fulfill the requirement of having fleishigs but I know others have a main course too. It’s too much for us.
You’re supposed to have meat at least one meal each day chol hamod but we dont always. At meals where we don’t have fleishig dh and older boys have wine. Best to have a meal with bassar and yayin but we don’t do that every day.
