You need more fat in your diet. Add more cheese to your eggs. Cook them in butter.
And while 1 banana may not throw you, a banana a day might. So can apples if they are eaten regularly. What kinds of nuts? Some are higher carb than others.

And some veggies are high carb too. Do you add dressings to your salads? Many have sugars in them.

If you are not eating enough, your body may slow down it's metabolism to preserve energy.

There is nothing wrong with saturated fats. Fats don't make you fat. Thats a myth that has never been proven in science.
Gefilte fish has sugar in it. And matzoh meal or potato starch which are carbs. And if you add chrain, many have sugar in them too.
