Why not? As long as pot is on it first and you're turning it higher or lower to cook the food

My rav holds yes and that you can even turn it off but there are different opinions on that

Only if you need to do it to enhance the cooking, and you have no alternative (like taking the pot off the fire completely).

I only adjust flame as needed when something is cooking on it. For example, soup needs to bubble on high flame when I’m warming it from the freezer. But then I need it on a lower flame after bubbling to keep warm till the meal. If I take it off then it gets cold by the meal, if I leave flame on high it will burn.
I’ve always learned you can adjust flame while food is cooking

Same.
I always thought you can adjust as needed but recently learned from our Rav so that you can only higher the flame but not lower it.
So ask your LOR.

I do it to prevent food from burning, water over boiling.
But I don’t think it is the best…best is to remove the food and not lower the flame.
