Just found out some of my guests are gluten free.
What would you do?
Make sure there is options they can eat or redo the menu to be gluten free?
For Yom tov I do lots of breaded items and puff pastry, pie shells kind of dishes.
Now what?
Where is gluten hidden?
Also any ideas for a fancy type of chicken that is gluten free? I usually use chicken cutlets for Yom tov meals.
I want to keep my kids happy too.

Everything you eat (e.t.a.) that is not gebrakst -pesach is gluten free. Most diet style dishes are gluten free.
Very easy to make your proteins gluten free. Potatoes, rice, quinoa, all gf. Vegetables too.

Not true re pesach - matzo meal is wheat!!!!
Also, gluten is hidden in unexpected places - soy sauce, yoghurt coated dried fruit for example, stock cubes - read the labels 🏷

Most gefilte fish are gluten free.
Salmon can’t be solved without gluten
Shnitzel- you can coat with GF crumbs. Many stores have different types.
Chicken - drizzle with honey or GF spice rub
Challah - you can buy GF challah or GF oat matza
Gluten is found in wheat, oat, barley, rye, spelt.
Malt is barley. You have to check every item.

Actually most gefilte fish HAVE gluten
not sure what salmon cant be solved without gluten was supposed to mean...
for chicken you can do grilled with herb marinade
or use gefen cornflake crumbs for breading...
Gluten hides mostly in soy/teriaki sauce some soup mixes and as malt. Most rice crispies and corn flake crumbs have malt.
I dont think that you need to redo the whole menu but do make sure that every course has GF options for main/side

Yes, not hard once you find the substitute. There is gluten free call easy puff pastry you can buy in some kosher supermarkets have it. Leach Rice Krispies is only company that is gluten free, gefen corn flakes, rorie flour or almond flour is gluten free, there’s coconut aminos soy sauce and teriyaki sauce that’s gluten free. brown rice pasta or they sell cassava flour pasta and orzo. But easiest is rice and potatoes if you don’t want to make all new dishes for guest. Just make same things with substituting different ingredients.
Not so hard once you know the products you can improvise with

Make sure there are enough options, that those options are separate from the gluten options and that’s it. So GF challah (you can get oat rolls from twisty they’re hamotzi), fish cooked or baked, cutlets you can do with corn starch and rice crispies (just check the box to make sure there’s no wheat or barley) and mashed potatoes, veggies, or if you want pasta use brown rice pasta. Desserts sorbet or ice cream just check the package to make sure.

I would skip the gf substitutes and Just make some normal food for them - chicken, sweet potatoes, roasted veggies, etc
Your kids are likely not going to like gf puff pastry and breadcrumbs

If you substitute for normal ingredients then kids don’t care. I use the easy gluten free puff pastry for my picky non gluten free kid too and he doesn’t complain at all. Tastes very good. I’m not sure if she mentioned that she cooked already and found out now. So I’m suggesting how she can make the same dishes with ingredients that work. Good luck in figuring it out.

Find out from guest if cross contamination is an issue, as the gefen corn flake crumbs (since you say you bread a lot) only ingredients is corn and salt and it doesn’t have malt like the other companies, but it doesn’t specifically say gluten free on the container, so there’s a possibility that it can have cross contamination.

I wouldn't worry about them being able to eat everything. Buy gluten free challa, try and make sure meat and chicken and fish and least one side/dip/salad is gluten free.
Soy sauce and soup powder often have gluten in.
If serving soup, keep the matza balls and noodles seperate.

As someone that's gluten free and have a few kids gluten free too, here's what I do as a guest and would tell guest to do.
Challah and gefilta I take with me always, that u can ask them to bring. Everything else I just ask that they be careful with cross contamination. Like not putting kneidel in soup, kishka or Barley in chulent.
I don't expect the same food as everyone else and will make due with what is served and I can eat.
Of course I appreciate when someone goes out of there way to make the meal gf, but I don't expect it.
If u already prepared all ur reg food serve that and make a separate gf option for ur guest.

Just to correct. This is 100% false. Most gefilte fish does have gluten. If you want a gluten free gefilte fish you need to specifcially look for a gluten free loaf. The standard ones are all gluten.
What does salmon can't be solved without gluten mean? Thinking that's a typo because that's definitely false. Most salmon recipes don't use gluten. You can just put some spices on top..

I already cooked most of Yom tov.
I didn't do my grains, salads, salmon or chicken.
Do I not serve my kugels, pies, pastries?
How can I make chicken cutlets or chicken festive? I don't want to do shnitzel or regular spices.
Also it's really cold here. Normally I would just do ice cream for gluten free dessert but I'm doing hot baked desserts.
Thanks for telling me about malt. I never knew to look at that.
