Can you cook a roast at 200 degrees Fahrenheit?
I’d like to cook my roast overnight on Friday for shabos lunch. I’m leaving my oven on 200 over YT.

It will be ready at 9-10 hours (and turn to cholent after that).

I bake it at 235 for a good 8-10 hrs, comes out buttery soft

Can you explain what you mean my "turn to cholent"? Does that mean that a sliced roast, like brisket or minute roast, etc. will simply fall apart and not remain in slices any longer? Or do you mean something else by that?

I put it in before I go to sleep Yom tov night and in the morning it’s ready and yum but my oven will be on 250

It gets an overcooked taste similar to cholent (I guess it's that cholent taste, cooking beans or anything else for 20 hours).

I plan to leave my oven on at 200 all YT (mainly for reheating),and I’m worried if that’s an ok temp to cook with.
