There definitely are kosher capons! In the chicken industry, a capon is a castrated rooster. They are shechted too. I think the only thing the kosher companies can't do is request the capons be castrated for them. If they are already castrated by the farmer/growing house, they can be bought live and shechted.
They grow bigger than regular chickens, and are very 'juicy'.
I love capon wings!
Bake a capon as you would any other chicken.

I know this is a very old post but would be so grateful if someone can help me out. Was wondering if I can bake the chicken capons I bought, on yt at the temperature of 225? If not can I cook tomorrow and freeze and then rewarm? And does it get cooked covered or uncovered?

You can do it at 225, it needs for 5/6 hours uncovered.

I usually make a mushroom risotto with fresh thyme and truffle oil and stuff the capons with the filling

Kosher.com has many recipes. Generally, either something goes under the skin, or in the center and the capon gets rolled.
