I made onion soup for YT with 10 Spanish onions, 1 cup dry white wine, 4 cups chicken broth, 4 cups water, seasoned with salt, pepper and thyme. It has a distinctly sweet taste! It's not missing salt. What can I add to balance out the sweetness?

Let it settle. It might be great. Worse comes to worse add a drop more salt before serving.

Onion soup mix or miso to balance it out
Can also add a little more acid like white wine or balsamic

Stretch the soup
Add water
Would you throw in potatoes or other vegetables to absorb some of the seeetness?

Or make it mushroom barley onion soup

Throw in some fried mushroom and raw barley and let it cook
Can also add diced carrots

When my sauces & soups seem to sweet, I add a bit of balsamic vinegar. Start with just a bit, mix well, taste & add more if needed.
