Yes, it's one of the original ketogenic diets. It's a way of life, not a temporary diet.
Going off keto may cause health issues if the person goes back to eating foods that cause inflammation (like sugars and grains).
A ketogenic diet is very healthy. A low fat, high carb diet is not. So yeah, if you go from a healthy diet to an unhealthy one, its likely to cause health issues.
On shabbos I have a sip or 2 of wine or grape juice for kiddush. I wash and have a small challah roll. Everything else is NSNG. (No Sugar, No Grain). I'm not starving myself in any way.

You should try to get 8 hours of sleep each night and walk at least a half hour every day.
Have you been checked for sleep apnea?
