how long does baked chicken stay good in refrigerator?
if I bake tmw -will it still be good fri or should ii freeze?

How are you serving the chicken?
Some chicken recipes don't reheat well.
Is there some reason you can't cook on the same day - prep before and just put it in the oven?

Chicken does not taste good if it’s not made the same day.

It probably would, we eat shabbos leftovers 3 days later
But I'm planning to freeze so it should be fresher
