Anyone has a good dietetic vegetable/ broccoli kugel with no flour?

I got from a friend

A bag of frozen chopped Broccli defrosted
1/2 red onion, thinly sliced half circles
Thin slices red onion
Sauted diced onion
Mix in 1 tablespoon of mayonaise
2 eggs (or 1 egg plus 2 whites)
Salt and pepper

Mix it all. Bake at 350 uncovered for an hour or hour and a half, or until top is golden

Bake a bag of frozen broccli cuts with a bit of water covered for an hour.
Drain broccli, mash with masher. Add in sauted onions, 2 eggs, 1 spoon mayonaise, salt and pepper. Mix and put into baking pan. Bake at 350 for an hour and a half

Optional to add sauted mushrooms and shredded carrots. Can also sub cauliflower for broccli.

Spaghetti squash or mock lukshen kugel
Cut spaghetti squash in half
Bake cut side down at 350 for 45 minutes. Scrape out seeds. Take out the squash strands with a fork.
Mix in 2-3 eggs, a little oil, salt and pepper
Bake in a pan on 359 for an hour or until top is golden.
If you want a sweeter yerushalmi taste you can add sweetener, or add browned sugar. But I never tried that

1 squash
1 big carrot
5 potatoes
1 onion
1/4 knob celery
1 T salt
3/4 cup oil
5 eggs
I grate the vegetables with the noodlelike insert from the Braun then mix in the eggs oil and salt by hand.
It has better texture than if you do it with the S blade.

Bake on 400 for 45 min to an hour

This freezes very well.
I make this Pesach and year round. It's an easy yet gourmet-ish side dish.
(Compared to potatoes in the oven rice and mash potatoes Smile )

4 potatoes
4 zuchinnis
5 carrots
1 onion
8 eggs
3/4 c oil
1 tablespoon salt

All veg need to be grated then mix by hand with the eggs and oil and salt

We like this one
