I think its only certain nuts. PPle dont eat Chrain or things with vinegar. Not sure its everybody.

We don’t eat walnuts and vinegar
So they do make special dips and chrein that say no vinegar
So no sour pickles or dressings with vinegar
We also don’t make pickled meats

All the things like nuts, vinegar etc we hold only if it's not the main ingredient so peanut butter chocolate chip cookies are ok.
I wouldn't make vinegar cucumber salad but could be it's ok.
Regular salad dressings that have a few spoons of vinegar is allowed.

Nuts that should be avoided is almonds asaik.
Peanut butter is ok. So is pistachios.... (My kids go thru them like nobody's business! So goo thing they aren't not eaten in tishrei)
Regarding vinegar, you don't eat soured things. Like sour pickles or a very sharp/sour foods. Like chrein or vinegar marinated pickle salad. But a salad dressing with a drop vinegar or other such recipes/foods are ok.
At least that's what is our family minhag.

With gematria you always have the option of adding 1 for the word itself.

I always thought it was primarily walnuts, and other nuts by courtesy.
Walnut in Hebrew is אגוז מלך, the King Nut, the prime example of nuts.

It's an option. Not obligatory.
It's that one that can tip the balance, so we avoid it.
Personally, I don't like nuts, and avoid them every day of the year. I wish I could do so well avoiding chataim.
