I want to start making my own dips. They're so expensive to buy and taste so much better homemade. IDK where to start! please reply with your favorite dip recipe. Bonus points if it freezes well I can stock up.

Another easy and delicious one is roasted tomato dip.
Roast cherry tomatoes with some garlic cloves, olive oil, paprika, salt and pepper in the oven until charred, cool down and blend.

My 3 go tos are olive dip, onion dip, and garlic dip.
Olive:
Food process a few cans of pitted green olives with a few cloves of garlic. I usually freeze this in serving sizes and when I want to use I take one serving out and mix with mayo.
Onion:
Caramelize tons of onions for about 45 mins to an hour on low with olive oil.
I usually freeze this in serving sizes and then mix with mayo when ready to serve.
Garlic:
I can make garlic confit- garlic with oil in the oven on 325 for an hour and serve that or I can take the garlic confit, remove the garlic smash it up and add mayo, salt, and paprika.

Poke holes into an eggplant roast face down on 450° for about 45 min.
Put into food processor with mayo, salt, pepper, fresh/frozen garlic lemon juice and blend.
Take jalapeños, garlic (and some purple onion) cut them up how you like drizzle oil and roast in 400° 35-45 min.
Take red bell peppers and an onion slide them up drizzle with oily salt pepper and roast for 45 min on 400 then blend it.
I can’t remember tomato dip and matbucha off hand.

I also make my own S’chüg sometimes.
Jalapeños
Garlic
Lemon juice
I once made it the real way with parsley and cilantro but I don’t have patience to wash off the mud and check for bugs.

Sure. It’s more like an eggplant carpaccio. You can also slice and grill them in your grill pan and then do the below steps:
Slice eggplant lengthwise in half score. Drizzle generously with salt pepper and olive oil
Bake on 400 face down until soft.
When ready to serve: reheat on hot plate. Scoop out inside and mix with oil and salt. Put back on. Drizzle with Tehina, silan, Malden salt, fresh parsley, pomegranate.
