Cottage cheese pancakes
Cottage cheese 2/3 cup to discard about 1/3-1/2 cup
1 egg
2 tbsp sugar
flour until like pancake consistency (I use spelt so can’t help here with measurements)
Olive oil 1 tsp
Fry like usual pancakes
Delicious and healthy

You can make flat bread by frying and adding spices.
I've made cakes also, but didn't save recipes.

The easiest recipe I’ve made is you just add oil to the sourdough and it Becomes a cracker dough you shmear on a cookie sheet and makes great crackers. I don’t remember the exact recipe.
It was something like 200g starter to 50g olive oil. Spread on cookie sheet with spatula. Sprinkle with spices like everything spice and push in with rolling pin. Bake 25 min at 350.
This is another cracker recipe that is easy to make. My kids love it. But it’s a pain to roll out thin.
Crackers
1 cup / 200 g sourdough starter
½ cup / 60 g all-purpose flour
½ cup / 60 g whole wheat flour or regular
3 tablespoons / 32 g olive oil
½ teaspoon sea salt
Mix together. Let sit 30 min.
Split dough in half. Roll each half very thin - like size of baking sheet. Spray pan. Sprinkle everything spice or spices of choice. Roll into dough with rolling pin.
Can scour before baking so it breaks easier.
Bake at 350. 30 min. But watch so doesn’t burn. Depends on thickness. Break into crackers.

Pizza.
This recipe is really good. Dough rolls very easily. There is a quick optional method also.
Sourdough pizza
Make 3 - 12” pizza
INGREDIENTS
(180 g) water
(125 g) sourdough starter/discard
(375 g) all-purpose flour
(7 g) fine sea salt
1 teaspoon baking powder (optional - if not
allowing it to rise)
(30 g) olive oil
1. Mix all ingredients.
2. With baking powder: Let dough rest 30 minutes. Shape
into 3 balls. Let rest 30 minutes covered. Roll pizza crusts.
3. Without baking powder: Knead dough 3 times - every 30 -
60 minutes.
4. Let rise 8-12 hours.
5. Cut into 3 pieces and shape into tight balls.
6. Place balls in fridge covered for 6 hours.
7. Make pizza.

Sourdough wrap
Pour discard on a baking sheet, spread into a flat circle
dice a small onion,mix with oil and salt, sprinkle on top with sesame seeds
bake for 12 minutes in preheated oven at 330
let it cool and eat as is or top with avocado eggs etc…

I made this one and really liked it!
(Also, do you feed your regular starter with bread flour or all purpose? I was always doing bread flour but I realized I prob don’t need to!)
