I see there was another thread about a week ago about induction vs. gas. So I won't ask that to be the main topic of the thread here, though I'm still not sure at all what to do--I'm thinking to do gas for fleishig (to have the ability to cook on YT) and induction for milchig but I'm really not sure. My main hesitations over induction are: YT cooking (I'm not a very planned person such that I want to lose my ability to cook on YT) and also that I just have never used it so I don't know.
Aside for that, I was thinking to get a 2-burner for milchig, since we don't have a lot of space there. But it seems to me that those all have the two burners very close together, such that you couldn't actually cook with two normal-sized pots at once. Are there any that have a wider spread--how would I go about finding that? Or is that less of a big deal than it seems it would be?
Similarly, for fleishig I have room for a 76 cm cooktop (equivalent of 30 inches) and I see for that size they are all 5-burner models. But the burners seem closer to each other than I currently have in my 60 cm cooktop with just 4. Can anyone explain this to me? Do I actually benefit from getting a larger cooktop if I can't actually use all the burners at once anyway?

Living in Israel and I've gone to a few stores but each has just a few models and I feel like I'm just piecing together information without getting the bigger picture, and none of the brands/options are familiar to me.

How many pots are you actually cooking with at one time? I will often use 2, sometimes 3 but I don't think I've ever used 4, let alone 5 burners at a time. Think about your regular day and week. Obviously yom tov is different but I found I would stagger the cooking anyway, or do some things in the oven, not needing so many burners.
All the 2 burners I've seen fit a regular sized pot and you can fit another one next to it. If you look at the specs it should say what size pots it's made for.

I do sometimes use 4 pots at once. It's sometimes crowded but manageable. I've never needed to use 5--I guess at that point I'd just wait.
Yes the 2 burners fit a standard pot but what else can go next to it at the same time? It seems like you couldn't for example both cook pasta in a normal pot and also make sauce in a normal size pan at the same time.
