I want to serve individual poke bowls for yom tov. Any ideas how to plate them so they look pretty? And what to include?

That’s a great idea.
I find that when I put each component in its own section and not put similar colors near each other it is the prettiest.
This is things I have included
Salmon
Kano
Avocado
Edamame
Shredded or julianed carrots
Roasted sweet potatoes
Cucumber
Mango
Purple cabbage ( know it’s not authentic but love the color)
Sometimes will top with black sesame and garnish with scallions
Drizzle with sweet sauce and or spicy mayo
