Hi!
More than once someone offered us eggplant parmesan. Parmesan is a very specific type that most likely (I have never tasted it) has a unique taste. Whenever I eat eggplant parmesan the cheese tastes like ordinary cheese. Shouldn't the parmesan give it a unique taste?
Thanks,
Lion

Many don’t put parmesan cheese on top. Just like mozzerela cheese. They don’t want to be milchigs for many hours I guess.

What kind of Parmesan cheese are you using?
A lot of Parmesan cheese sold might as well be white sawdust as it is tasteless.
Good Parmesan is delicious and can actually be eaten in thin slivers just like any other good cheese.

Most people don’t use real Parmesan since it’s a 6-hour dairy cheese
