Normal Challah recipe, changing to Spelt

How can I substitute my regular Challah recipe with trying to use Spelt flour instead of my normal Challah flour.
I would like to keep my normal challah recipe.
So do I use the same amount flour or do I have to change the ratio?

I changed to spelt flour a few years back and kept everything exactly the same.

I used the regular recipe. I think the key to good spelt challah is the quality of the spelt.
You might have to adjust the water ratio slightly but otherwise it’s the same recipe.

Anyone found that they had to reduce the water (by approximately 25%) ?

For a 6lb recipe that I'd normally use 5.5 cups white flour, I only put about 4 3/4 - 5 cups water for spelt. Comes out delicious!

A reduction of 25% would be cutting the recipe of 5.5 cups to 4-4.25 cups. Cutting down to 4.75-5 cups is just a reduction of about 15%.

Basically, using 1.25 less cups of water.

I think we're misunderstanding each other Very Happy!!

I only use 3/4-1 cup less water. Either way, hope everyone's challah is delicious!
