I make most things parev and then can use for a milky or meaty meal. Most pots are parev, some meaty and v few milky. I have a parev utensil drawer and mostly parev containers.
I have a small kitchen.
It would make me nervous to make things in meaty or milky unless they obviously contain meat or milk. But my dh grew up only using meat and milk and no parev.

I guess that's what I'm really asking, not if you used some parve pots, but if you mostly used parve cookware for anything that did not include actual fleishigs or milchigs.

I make soups. And pasta so if there's leftover (I won't serve it all) it can stay pareve.

We had to separate pots one for fish one for eggs. The rest were milk or meat.

Actually one of the reasons I have parve pans is then I don't need as many dairy and meaty ones. I can have one single parve pan for side dishes instead of one meaty and one dairy. I'll use it for side dishes such as rice, potatoes, beans, pasta etc. to be served at either meaty or dairy meals.
