I think people are overlooking pareve soups.
A good hearty veg soup with beans, lentils, barley or even noodles is a great start to a healthy filling dairy dinner.

lasagna tonight. Maybe tuna patties and salad or another veg.

I guess we will do salmon or other fish another night, pizza, lentil curry, fish and chips (for kids/husband, I wll prob have baked fish and salad)

Sushi salad !!
I do pieces of salmon instead of Kani
Sushi rice. Avocado. Cucumbers. Roasted sweet potato. Edamame. French fried onions. Sometimes shredded carrots.

We don’t like eating soup in the summer. I do make one hearty vegetable soup in the 9 days, and use it also for breaking the fast meal, but it’s met with groans of “it’s too hot for soup!”

I have little ones at home so I can't give them breakfast foods 3 meals a day. I try to make either lunch or supper a heartier plant based meal. We aren't big fish/falafel eaters and I find that's what kosher sites are mostly talking about, so I take advantage of vegan blogs. Here's some ideas.

Black bean burgers
Lentil stew
Chickpea curry
Tofu stir fry or tofu steaks over a grain
Rice and bean burritos
Eggplant meatballs
Shepherds pie with lentil/impossible ground beef base
Stuffed sweet potatoes

Most of these meals aren't very labor intensive and use few dishes. If I don't have a plan, throwing pizza in the oven is the quickest and easiest on my brain. If I meal plan and know what I want to make, these are plenty easy and much more satisfying. If you're coming home from work and need supper ready in 30 minutes, not all of these will work for you, but there's so many quick options if you do a little research.

Today we're having split pea soup, salmon, broccoli Kugel, salad.
The rest of the week, I don't know yet. The 9 days are really hard for me as I usually limit eggs and dairy because they're not great for me.
