I am looking for a chicken cutlet recipe but the main thing is that the chicken should be moist and delicious. I am fine cooking in oven or on stove but want few ingredients. I have a theory that it's not so much the ingredients as the cooking method.
What do caterers do to make their chicken moist and extremely flavorful. Help!

Do you mean schnitzel? They fry it on very high heat for a very short time in lots of oil.
