Can I do this? Will it come out “ soggy” and not crunchy?

Yes sure. Comes out great. Crispy outside soft inside.

Do I do anything different to the schnitzel than I would if I was frying it ?
How long should I do each side for ?

I do eggs and breadcrumbs. Betty crocker parchment liner. oil. Preheat. fry.

I leave it closed. 4-6 minutes per side. My kids say it’s better than fried.
