Kugel, franks and blanks, egg rolls - mini, sesame chicken, hot pastrami, chicken fingers - anything I should add or take away? And how many pans of each?

the caterer should be able to advise you but keep in mindthat people eat more when they help themselves then when they are served a plate

Even if it’s after regular supper time, many people come to an event like this before eating dinner, because they expect to get dinner at the event.
Don’t count on less portions because it’s officially after dinner time. Tell your caterer that you need to feed 75 people and they will tell you how much of everything you need.

I was planning to make kugel, and buy the ready prepared frozen eggrolls and franks and blanks and bake them out to save on the costs.

I would add rice since its part of a Chinese menu.
Kugal - assume each feeds 10 people so have 8 to 10?
Seasame chicken - ask the place you order from how much each pan is meant to serve
Hot pastrami - same as above
Rice- same as above
Mini egg rolls- estimate 3 per person
Mini franks in blanks - estimate 5 per person
Chicken fingers - do you really need this? If so estimate 3 per person

This seems super excessive and I like having generous food.
We had 50 ppl for a siyum recently and they milled for a while. Used
1 double pan of fancy rice
2 9*13 of poppers
1 of brisket
1 of ribs
Besides this we had Kokosh cake/ nuts fruit and lots lots of drinks

A 9x13 potato kugel serves 12-15 slices according to catering.
If you have 75 people I would think
2 roaster potato kugel
2 roasters chicken fingers
1 roaster pastrami
1 roaster sesame chicken
1 roaster Frank's and blanks
1 roaster eggrolls
Is it men only? Men and women? If it's a community where women are away and it's summer, and only men, then they might count it as their supper,
You can add salad and fruit on table.
You can add frozen fries.

Thank you! This is helpful. A 9x13 of brisket and ribs? Or double?
And drinks you mean sodas and water?

Another question that will affect amounts is the style event. Will people have where to sit? Are people stopping in and out for a few minutes?
I would do a roaster of rice, potato kugel, sesame chicken, franks and blanks, egg rolls and pastrami. Then have an extra 9x13 of potato kugel and sesame chicken.

Probably going to be more in and out type of thing

If there are places for people to sit assume people will take more. If everyone is standing squishy holding their plate, you can assume people will take less.

I would calculate about 1/4lb -1/3lb per person of each thing.
I think a 9x13 is about 5 lbs.
