I want to make a buffet style Sheva brachos, how many different types of food do I need? Also I need an idea for a first course to be by each setting

More formal or more casual?

For these type of things I like to choose a theme or cuisine and I find it falls into place much easier.

For example I once made a more casual sheva brachos and we did sort of deli style. So the buffet had different types of sliced meat, chicken and deli, hot and cold, all different types of bread, nice condiments, pickles and vegetables.
We used cute red and white checked material for the tablecloths.
It was really nice and fun.

You could do asian, Italian, Mexican, a BBQ… lots of options
