Do you get soaked in the cave of the winds the whole time? Is it dumb to take my professional camera along? Or will it be ok in my bag with only taking it out at dry spots? Are there any dry spots?

It's totally up to you how wet you want to get at Cave of the Winds, if at all. You walk along a boardwalk that takes you near the bottom of the American Falls, but you can turn around at any point and avoid getting wet altogether if you so choose.
There's one (completely optional) area up some stairs called the Hurricane Deck where you get sopping wet. Some DC's loved it and were laughing hysterically and dancing around as they got soaked. You can join them or watch from a safe distance.
