We'll be driving up to Niagara ih & looking for places to stop on the way for a picnic lunch & for the kids to stretch their legs.

Niagara is in NY. Maybe be more specific where you'll be coming from.
But Binghamton and ithaca areas are on the way and good stops. Have beautiful parks.
Ithaca area has tons of waterfalls and gorges so more for an exotic stop whereas Binghamton is a more utility stop (approx halfway).

We're going to Niagara Canada.
Thanks for the recommendations. Are there playgrounds with restrooms in Ithaca NY? TIA

we stopped in Syracuse and went to the great NY State fair which is if it’s still going on I highly recommend!!

Niagara Canada is right over the NY border. It's helpful to know where in NY you're coming from.
Syracuse, like the other poster mentioned, is actually out of the way if you're coming from Brooklyn. On the way if you're coming from Albany.
NY is pretty big.
I'd probably check out Taughannock Falls State Park.
Should have a kiddie section. Does have bathrooms. Huge waterfall that you can drive to the overlook. And an easy 1-2 mile flat walk to the base of the falls as well. Really great way to stretch legs (don't need to go the whole way but the path is wide and flat so kids can run ahead)
Downside over a regular playground is that it's $9 for parking (but fee is good for same day at all NYS parks so can stop at a later one closer to Niagara as well like Letchworth).

There's a bunch of lookout points and places you'll see as you drive.
We also stopped at Corning glass museum. So cool.

we came from manhattan and it was on the way. but it’s worth going out of the way for it was that fabulous

We're going from Monsey area ih.
I think Syracuse is pretty mid way, correct me if I'm wrong though.
