INDIAN TOMATO SOUP WITH COCONUT
from Still Life with Menu, by Mollie Katzen

This recipe calls for pureed cooked tomatoes. You can puree canned tomatoes in the blender or food processor, or cook fresh peeled ones and then puree them. (Don't use canned tomato puree. It will be too thick and intense.) Approximately 2 pounds or 3 large tomatoes will yield 3 cups of puree.

The sesame and mustard seeds can be left whole or, for a finer-textured soup, ground (before cooking) to a powder in a spice mill or clean coffee grinder.

Ingredients:
1 cup shredded unsweetened coconut
2 cups boiling water
1/3 cup sesame seeds
1/2 teaspoon whole or ground cumin seed
1/2 teaspoon mustard seeds
3/4 teaspoon each cinnamon and ground coriander
1 Tablespoon butter
1/2 teaspoon salt (increase to taste if using fresh tomatoes)
3 cups pureed cooked tomatoes

Optional garnishes:
yogurt
a little cayenne
minced fresh mint leaves

1. Lightly toast the coconut, either by stirring it in a cast-iron skillet over medium heat or in a toaster oven. Watch very carefully to prevent burning.

2. Place the toasted coconut in a bowl, pour the boiling water over it, and let it soak for about 15 minutes. Strain through a fine strainer or sieve into another bowl, pressing out and reserving all excess liquid. Discard the coconut.

3. In a medium-sized cast-iron skillet, saute sesame, cumin, and mustard seeds with cinnamon and coriander in butter over medium heat, stirring frequently, for 8 to 10 minutes, or until they give off a deeply toasted smell (and the whole seeds start popping). Remove from heat and add salt.

4. Combine the sauteed seeds and spices with the coconut liquid in a soup pot or Dutch oven. Add the tomatoes.

5. Heat just to boiling, then reduce heat and simmer very gently 15 to 20 minutes. Correct and adjust seasonings to taste. Serve topped with yogurt, cayenne and a few sprigs of fresh mint.

Depending on how much you and your husband like Indian spices and flavors, you might want to tinker with the spices a bit, using less if you feel it'd be better that way.

This is my 1st posting here. Shabbos we eat in shul. Yomtov we make a kiddush in shul, and eat at home. (Looking forward to yomtov.) I am low on household help right now, so my shortcuts are the smoked fish and jarred salads.

Fri nite:
Homemade challah
Smoked mackerel
Beet salad, pickle salad, and eggplant caviar from jars
Black olives
"Arroz" con pollo, over macaroni instead of the rice
Corn
Homemade ice cream - choc, vanilla, coffee
2 cakes - undetermined as of yet

Shabbos day:
Homemade challah
Smoked mackerel
Beet salad, pickle salad, and eggplant caviar from jars
Black olives
Cholent with homemead kishka
Eier mit tzibel
Zucchini kugel
Salami
Homemade ice cream - choc, vanilla, coffee
2 cakes - undetermined as of yet

Also SB - for me: babaganoush and fake potato salad made with cauliflower

This week is my anniversary, so I always make a "shabbos sheva brochos" that shabbos of the anniversary!
I invited my parents for the night meal so it will be very nice, iyh!

Friday night:

fresh challa
salmon wellingtons with dill, mayo and fried onions..
sweet and sour salmon
gefilte fish
tomato dip
all diff dips
chicken soup, knaidle
chicken with sweet potatoes
potato kugel
maybe a veg kugel
hot choc cake with mango, and ice cream

Shabbos day:

challa
fish
eggs and salad
sauteed liver
yaptzik
deli
same dessert

well I edited my own menu from the previous page just a drop. I ditched the babaganoush for the moment as I have no patience (but maybe yet...).

however, I added a homemade apple pie. I actually am making two to give one as a surprise to our downstairs neighbors.

Easy Shabbos for me-I usually only make things that take 10 minutes or less.

Regular gefilte fish
chumos, eggplant, dill dip, israeli salad
chicken soup - kids are so excited I don't think I made chicken soup since Pesach- with vegtables and matzoh balls
sweet and sour flanken
sweet and sour meat balls
potato kugel (bought)
roasted peppers with garlic
string beans with shallots
chulent
deli meats
fresh fruit
peanut butter cookies
and something with whipped cream taht I accidentally deforsted still not sure what though
