Does anyone know of a good recipe for pareve creamy mashed potato’s? My husband doesn’t like it with mayo or egg.
(I’m going to add fried crispy onions.)

I like to use a margarine spread like Smart Balance. Carmelize onions and add them with all the liquid and oil from the pan... yum!

I use pareve sour cream, pareve milk, plant butter. They are so so good but very unhealthy.

My family loves when I use Yukon gold potatoes. I leave some of the water in when I strain and add a little margarine or olive oil and salt to taste. So not leave lumps . Reheats beautifully.

Do not use russet potatoes. Yellow are best
Fried onion elevate it

100%. I only use red or gold potatoes.

This makes the most delicious potatoes.

Sautee onions in the pot. Add the cubed potatoes and stir. Add water upto 3/4 the height of potatoes season with salt and pepper. Bring to the boil, lower flame, cover and cook until soft. When soft, remove cover, return to boil and until water has reduced till about half way up the height of the potatoes. Remove from heat and mash together with the water in the pot.

Alternatively, on days I'm not in the mood of onion, I sometimes boil up potatoes using the same technique and add some mustard and olive oil before mashing which is also very tasty.

The trick is to boil a few whole cloves of garlic with the Yukon potatoes then mash all together with extra virgin oil and some reserved water then add salt tastes amazing!
