What do girls 12 and up do on Sundays? I was thinking of starting a Sunday program for ages 12-16. It will be more about cooking/baking and sewing. I’m in Brooklyn.

Please let them rest, or do their own thing, UNLESS they want

Just echoing, unless of course you dd is interested in more activities then by all means.
My dd happens to like sleeping in late (her weekdays are so demanding), catching up on homework, doing creative projects on the computer, reading & having a day to just leave open.

If Mrs Fishman won’t give until high school, I do offer private sessions, aside from the business I want to start.

Sure why not as you have nothing to lose as start up costs are minimal.
You don’t need every girl to want because how many can you actually effectively handle anyway.
I would try varying them. For example, cooking or baking could really be one session to learn how to make something specific. Center it around a holiday or a food that is trendy and teen friendly. Or a theme like snacks for sleep overs. Or healthy recipes.
Sewing is probably more difficult since most projects take more than one session. Years ago my Bubbe went to a weekly knitting circle at a wool store. It was part gossip and part learning techniques. She made beautiful sweaters which I still have stashed in moth balls.
If you know embroidery, that might be a good class because girls can learn stitches and then practice at home on their projects.

You should just go ahead and start in a very low overhead, low-investment way.
And maybe set a minimum enrollment precondition to proceeding, so that you can abort if enrollment is too low.
I don't have teens, but my DD8 did a 6- week Sunday cooking class run by a middle schooler (with her mom's help) and had a great time. A lot of her friends did it too. It was not something we needed to keep her busy, but she liked the idea of it and she liked seeing so many of her friends there.
