For cookies/baking there will be a difference. For cooking there will be no real difference

I'm not clear-you have brown sugar but usually use white, or the other way around? I think you would only really notice the difference when making cookies, as you get a softer chewier cookie with brown sugar.
For challos, I don't think it really matters. I've done it before and I think it was a sweeter and possibly slightly softer dough, but was fine. As hodeez suggest, subbing honey instead of sugar would also work.
