We sometimes have jonagold in the U.S. and they’re the best but if you can’t find them, everyone sells Cortland.

I've used pink lady, they cook well and are sweet. But this year I am doing Cortland. They're more tangy which I actually like.

Sorry I rarely see Braeburn and don’t know how they taste. If you want sweet, there’s a speckled yellow apple that makes a sweet compote but I think they’re seasonal and you don’t always see them. The smooth yellow apples are golden delicious. These are less perfect looking but better for compote.

Green apples a tart. They also hold their shape more so not necessarily for compote that you like to soften.
But if you like a sweet and tart crisp you can use them.
And you could try a compote with lots of sugar. Let us know how it goes.
