My family loves plum compote especially at this time of year. There is no recipe. Cut up plums onto bite sized pieces, add water to roughly half an inch above the fruit, simmer until soft. Taste the liquid and sweeten to taste with sugar, honey, agave or not at all ( We like our compote tart .) If the compote looks too.liquidy cook it a little longer. If it looks too dry add a little water.
This can be done, as NotFunny said, with every fruit under the sun or a mixture. I know you said no apples but for another time, my kids love applesauce with some blueberries or cranberries in it. (Do the above, then puree with a stick blender.)

Just about any combination of fruit that you can think of. (Except olives.)
Plums with apples is one of my favourites.
Cook without sugar, then taste it when it's done, and decide if you want it sweeter. I very rarely find it necessary.
