Almond flour is a new ingredient for us (last year was the first time we got it), so I'm looking for new recipes. The choc chip squares from between carpools should work for us as brownies. She lists it as a variation. We don't use chocolate (but we do use cocoa) and I'll replace the oil (we only have olive) with applesauce.
(I'm really hoping these details don't out me, if anyone figures out who I am, please let me know) |
Make the banana muffins and add 2-3 tbsp cocoa, skip the chocolate chips.

Thanks! (we don't use extra light, only reg EVOO from certain brands). Thanks for the muffin recommendation. I think we'll enjoy them.

Do these recipes work well with cottonseed oil?
And do they get dense in middle in a 9x13? Was reading somewhere to make cakes in 8” squares on Pesach

They should work fine with any neutral tasting oil.
The moist chocolate cake does not become dense.
The brownies are fudgey and the blondies are gooey.
I do prefer them in 9 x 11 brownie pans- the right amount of circulation seems to be better, but they work just fine in 9 x 13 pans.

Is that size that comes in disposable tins? I don’t want to store more stuff than I have already for Pesach

Yes. I don't buy reusable pans for pesach. It's easier to use disposable

I wanted to add another recipe from Faigy Murray.
Marble Cake
4 eggs
1 cup sugar
1 cup oil
1 tsp vanilla extract
1-1/2 cups potato starch
1-1/2 cups almond flour
1 tsp baking powder
Marble Swirl
1/4 cup oil
1 box instant chocolate pudding
Preheat oven to 350°F. Grease a 9x13 pan or 2 medium (3 lb) loaf pans)
Place eggs, sugar, oil and vanilla in a bowl and mix until well blended and frothy.
Add dry ingredients and mix until just incorporated.
Pour batter into a 9x13 pan (or divide between 2 medium loaf pans).
In a small bowl, mix pudding powder and oil until it’s starting to thicken, but still runny.
Drop pudding mixture onto cake batter with a spoon, and marbleize with a knife.
Bake for 35-40 minutes, until toothpick inserted in the center comes out clean.

All of these recipes use cocoa. Any good cakes without cocoa or chocolate chips? Can use potato starch or almond flour.
