What do you think of this chicken recipe for Seder?

SWEET AND SOUR CHICKEN
 
1 chicken in quarters
½ cup wine
Juice of two lemons
Juice of 2 oranges
3 large onions, sliced
3 sweet potatoes, sliced
3 large carrots in chinks
3 beets, peeled and cut in wedges
 
 
Sauté onions. Combine with other vegetables and place in 9 x 13” pan. Add chicken. Combine juices and wine and pour over chicken. Bake covered at 350 for 1 ½ - 2 hours, uncover and bake until crisp.

What chicken do you make for seder?

Would you serve this one ?

Sounds nice but are you able to use any spices? Even salt and pepper?

For the seder I don’t bake meat or chicken. I especially would not bake uncovered at the end to crisp the skin. It’s probably more delicious that way and it gets a nicer look but for the seder our minhag is not to eat anything roasted.
It sounds like a good recipe. I’d make it on the stove top and spice the chicken pieces before adding them. The vegetables sound nice. I’d add a couple of parsnips. Also two lemons sound like a lot. I’d add a tablespoon of honey to balance it out but I’d rather just use juice of half a lemon and no sweetener.

Wouldn't work in our family.... nobody would eat a side dish of sweet potatoes, carrots and beets!

Sounds great. One of my favorites is onions and fresh pineapple, and the usual spices. Optional: Apricot preserves.

I would do it without beets and carrots and use potatoes instead. I would also sprinkle salt and a little pepper.
But your family might like the original recipe. If you think they would like it then go for it!
