Can you tell me exactly how?
Do you add vegetables and herbs?
Can I use immersion (stick) blender because I don't want to make my processor fleishig?
And can I bake them (not fry)?

What are you making with the chicken when cooking it?
Texture will be much softer once cooked so I can’t help you with that as I never did it but I usually shred chicken( take it off from the bone )after making soup, mix it in with sautéed onions, bbq sauce and make sandwiches.
For Pesach it’s delicious enough without bread as well.

I would bake it or boil it, not sure.
My family won't eat chicken on bone (but I have some to use up), however if it is ground in patties they would (they do not like shredded with sauce)

Gotcha
I would bake it then, blend it with shredded carrots, zucchini, onions, spices with a thickener( panko crumbs or similar) and bake it like that. I would think frying it wouldn’t hold shape.

I used to do it years ago, added eggs, spices, and fried the patties.

You can make chicken chow mein with it, it's delicious.
Fry onions, add peppers and any other vegetables you like, add cut up chicken, cook it all together a bit, add spices such as salt, lemon juice, soy sauce, (I add a little sugar), serve with rice.

We make chicken burgers from leftover boiled chicken from the chicken soup.
Shred with a fork, add sated onions and celery, breadcrumbs and eggs, form into patties and saute. Yum!

Yes. I've grilled, baked and fried it.
Usually from the chicken soup. Was delicious. I also once mixed it like a tuna salad... wasn't too bad but didn't do it again.
