Why some minute roast comes out soft and other are tough

I roasted in sauce in the oven 2-3 hours in 350 and 2/3 hours 300. Slice than and hour drenched in the sauce

You could have US beef minute roast or something imported which is dry and tough (lighter meat).

No I didn’t some I bought at the store and some I got from tomchei shabbos

If you're not sure of the quality, cook it overnight at 215 for 10 hours until buttery soft.
