I made biscotti for shalach manos. After about 4 batches I realized that there is no margarine, oil, shortening etc. What you add may have fat, but its your choice what you can add to it.
1 egg
1/2 cup sugar
1 tsp vanilla extract
1 scant cup flour
1/2 tsp baking powder
1 tsp cinnamon
Whisk eggs, sugar and vanilla until thick and pale-should leave a trail when whisk is lifted.
Sift flour, b.p. and cin separately. fold into egg mixture. (okay, I always presift my flour, so I didnt sift it all together, just dumped it in and mixed with mixer.)
Here is where you add what you want. The recipe calls for:1 3/4 oz (50 grams) coarsely chopped dark chocolate, same amounts of toasted flaked almonds, and same amount pine nuts. I just used the chocolate. Other options are pistachios and craisins, raisins...etc.
Mix into batter. Shape into a flat log on greased cookie sheet (I used parchment paper). Bake 350 for about 25-35 minutes or until golden. Remove from oven and cool for 5 minutes or until firm (I averaged 7 minutes cooling time). Slice log in 1/2 inch slices. Lay slices on the cookie sheet, bake for another 10-15 minutes-turning them over halfway through for even baking. Cool. Makes about 16 slices.
This is easily doubled and quadrupled for larger amounts.
