I’m making a meal for a postpartum
It’s 3 adults
She went through a very hard labor and delivery
Is this enough food
Chicken & Rice with peas &carrots (I make it really good
Salad
Fresh baked chocolate chip cookies

If it's three adults and you did not mention any other kids, it's safe to assume this is their first baby? So you are making a meal essentially as a gesture of good will. The other two adults are fully capable of making dinner.
This is to say, YES, you are sending MORE than enough food for dinner and dessert! If they need more, one of the other two adults can make it. Even if this was a fifth baby and the dad can't cook and there was not another adult there to help, I would STILL say this is a perfect meal to send.

Sounds great
I would add a bottle of drink and disposable dishes
Maybe some cut up fruit if you have time/energy

Are the portions of each plentiful? Then I think it's enough. If you have time for some cut up fruit or a drink it's nice too but this does sound good.
If you have disposables at home, a nice thing I've seen is sending cutlery, cups, plates and napkins - just in case they don't have. It's just a nice added touch no need to make yourself crazy if you don't have it there to grab.

Is a soup needed
We live in S. Fl., but it’s cold today. S. FL. cold.
It’s 3 adults. It’s their first baby, but she had a traumatic labor and delivery. It’s her, husband, and baby nurse. She’s having a really hard time.
OTOH- I’m almost sure that ppl have been very generous and she has a lot of leftovers

Personally I would send another cooked veggy, a soup, and cut up fruit.

Yes it's definitely enough
When I got a meal train, most of the time we had leftovers. So worst case they can always pull out something from earlier this week if they want more than that. But I can't imagine adults generally eat more than that for dinner. When there are kids I try to include a little more variety to accommodate different tastes.

I was just coming on to ask why you are asking.
If you have plenty of time and energy and want to spoil the new mom, any additions are thoughtful and lovely touches.
If you are overwhelmed, busy or stressed and just want to make sure that you are ok, then what you have prepared is perfect.

I’d add plates, cutlery and napkins like the takeout places
I remember I got a nice dinner lasagna, with a bottle of ceres juice & healthy muffins all wrapped with a bow added such a nice touch with a Mazel Tov note..
Loved them so much I baked them myself dinner done healthy muffins ended up being my go to for meal train meals

Slice apples
Drizzle some parve Carmel sauce
Bake - I baked it at 300 45min.
It’s just I had all the ingredients at home already
