I want to make fried shnitzel but with crushed/ground almond instead of bread crumbs. I made it once but don't think it came out so good, so now I'm looking for a recipe. tia

I thought KBD short on time has a nut schnitzel recipe? If you want I'll look when I get a chance and post the recipe. I think it was a maple/nut kind of thing.. but I don't think it was fried.

that sounds perfect. if you can post it when you get a chance. and I definitely don't mind not standing over a hot stove frying

there are two recipes for poultry with nuts. this is actually for turkey cutlets but I'm sure you can use chicken instead-
Honey-nut-crusted Turkey Cutlets
6 (6 oz) turkey cutlets, pounded thin
salt
black pepper
2 (6 oz) cans honey-roasted almonds such as Blue Diamond brand (I'm sure any old brand is fine too!)
1/4 c. teriyaki sauce, plus more for brushing
2 T red-currant jelly
Preheat oven to 350. Put turkey cutlets on baking sheet lined with parchment paper. Season with salt and pepper and brush with teriyaki sauce.
In a food processor, pulse to process nuts until they are chopped. (Careful not to grind them to a powder!) Add the 1/4 c teriyaki sauce and currant jelly. Pulse 2-3 times to form a sticky paste.
Spray a small offset metal spatula or the back of a spoon with nonstick cooking spray and use it to spread a thin, even layer of the nut mixture over the top of each cutlet. Place in the oven and bake until cooked through.
(Allow the cutlets to cool for a minute. Serve whole or slice on the diagonal into 3/4-inch slices. Fan out the slices. Serve warm or at room temperature.)
There's a much more complicated recipe called maple-walnut chicken with sweet potato aioli... it looks great, but I think the recipe above was a little more like you were looking for?

What I do is if I am baking the cutlets, I smear duck sauce on top, then top with chopped walnuts, or whatever nut I have in the house. THey come out really delicious.
If I fry the cutlets, I egg them, dip into flour, egg again, then dip into finely chopped nuts and fry.
If I make shnitzel almondine, I just mix thinly sliced almonds in my corn flake crumbs, and egg, then coat, then fry...
