I tweaked the recipe to include squash (8 potatoes to half squash) and changed the oil to a healthier oil. And I dont do overnight so that its easier to digest.
Potatoes are potatoes though and carbs are carbs…

The only thing I can think of that would make it healthier, yet remain potato kugel is use less oil. I have a recipe for 5 pounds of potatos with only 1/3 cup oil. I like it with more personally.

Do you mean you now use 4 potatoes and 4 zucchini squash?

What's your idea of healthy? I use organic potatoes and eggs, and avocado oil. Would love to swap half the potatoes for cauliflower one day but always afraid my family will protest.

Try doing less than half and see if they notice...
Then you can decide if you want to up the cauliflower
Gradually...

5 pounds of Yukon gold potatos
1 large onion
5-6 eggs
1/3 cup oil
1 tablespoon salt
Pepper to taste
Mix oil, eggs, salt and pepper in a big bowl. Peel and process the potatos and onion. I like to do half shredded and half grated (also known as the kugel blade). Add potatoes and onions to the egg mixture. Mix well. Makes 1 9x13 or 2 rounds. Bake at 350 for an hr or until browned and crispy on top.

I swapped half the potatoes for zucchini. This was for a Rosh Hashana meal which we were hosting bachurim. No one noticed the difference.
