Hi,
Does anyone have a healthy recipe for almond butter muffins? chocolate chip type preferred and rather without bananas. I got one from one of the health stores- maybe jus by julie.. I can't remember

no white flour and not too much sugar, preferably not white sugar but if not too much its ok

I make this with out the banana I put apple puree instead
They were delicious and best part was they were so filling.
BANANA DATE NUT MUFFINS
Ingredients
2 cups almond flour
2 tsp baking soda
Pinch sea salt
1 tsp ground cinnamon
1 cup dates pitted chopped
2 - 3 ripe bananas
3 eggs
¼ cup oil
¾ cup pecans chopped
1 tsp chai seeds (optional)
ARCOS

Method
1. Preheat oven to 160 degrees and line muffin trays with cupcake liners.
2. In large bowl, combine almond meal, baking soda, salt and cinnamon.
3. In food processor combine dates, bananas, eggs and oil. Blitz until they form a smooth consistency.
4. Add wet mixture to dry mixture and stir to combine. Once combined fold through nuts.
5. Spoon mixture into cupcake liners. Top with pecans.
6. Bake 20 minutes until cooked through.
7. To test if muffins are cooked insert skewer.
