My rolled chicken roast fell apart - I couldnt slice - tips?

sigh.

anyone can teach me how to do this properly?

dark chicken roast in net - for reference

I baked it and cooled it in fridge overnight before slicing

Also - how on earth do all of you get the net off?

Put it in the freezer for 20 minutes or so before you slice it.
Make sure the knife is really sharp.

This is something I make every Yomtov, so I have some experience. Here are some tips I have learnt:

*Don't buy light, only dark chicken (I find turkey to be more dry so I avoid that too)
*The longer it cooks, the less chance it will fall apart.
*Always refrigerate overnight before slicing.

Bonus tip: I slice with an electric knife which has made my slicing so much easier and more even.
You can buy it on Amazon. Mine cost around $20 or so.

So did mine and I was disappointed
I served it as chicken pieces in a serving dish. I bought a dark pickled chicken, cooked it for a bunch of hours, cooled for a day or two and then when I tried taking the net off with a poultry scissors, the roast just disintegrated. I don't think I did anything wrong because usually this method works pretty well.

Freeze for a few hours.
Then defrost 20 minutes. Slice.
