We have an 8’ wide and 14’ long sukkah.
I assume two
Folding tables will be too squished.
Any suggestions to make the most of the space

My sukka is about this size and we use 1 long folding table.

You can get a 6 foot folding table and a 4 foot folding table and make it into 1 long 10 foot table.
Place 6-8 people on each side. One end of the table against the wall. Other end at opening so nobody at that wall either.
Otherwise one 8 foot table fits and seats about same amount of people with room to sit a person at each head of the table.

Depending on the number of people, we sometimes do a T, with one shorter head table and the longer one perpendicular to it. Makes good use of the space without feeling too crowded.
